Potato Muffins
Sunday, August 03, 2014Here is one quick recipe I thought to share with you! The other day I made some Korean Potato Pancakes and there were many ingredients left over - I needed to use them somewhere. I really love baking so I came to the idea to make my own muffins. Savoury muffins! I just call them Potato Muffins, even though they have only a little bit of potato inside. They are super easy to make and healthy too!
So here are the ingredients I use:
- 1 medium size potato
- 1 zucchini/courgette
- 2 carrots
- 1 handful of long green beans (trimmed)
- 2 duck eggs
- half a cup of plain flour
- salt, pepper and little bit of chilli powder

The next step is to divide the mixture between the paper cupcake/muffin cases before putting the muffin tray into the oven for 30 minutes or until they are golden on top.
